Tasting notes: The sugarcane decaffeination process is sustainable, natural and eco-friendly, preserving coffee’s flavour and aroma while removing caffeine. Green beans are steamed, then soaked in ethyl acetate derived from sugarcane. The caffeine bonds with ethyl acetate, and after extraction, the beans are dried leaving high quality decaffeinated coffee.

Captain Arthur Phillip, First Governor of New South Wales, led the First Fleet in 1788 and stabilized the fledgling colony through food shortages and diplomacy with Indigenous peoples. His leadership ensured the survival and early development of the colony, laying the groundwork for the thriving multicultural society that Australia is today.

Captain Matthew Flinders, an exceptional navigator, completed the first full circumnavigation of Australia and is credited with naming the continent. His meticulous maps were crucial for understanding the new land and establishing new towns. On his expedition aboard the HMS Investigator, Flinders was accompanied by Bungaree, an Indigenous man who helped foster cross-cultural understanding.

Major General Lachlan Macquarie, known as the Father of Australia, governed from 1810 to 1821, beginning the transformation of the colony from a penal settlement into a burgeoning free society. His infrastructure projects, such as roads and public buildings, were key to Australia’s early development and reflect the nation’s commitment to progress.

Francis Greenway, a convict-turned-architect, designed iconic buildings like Hyde Park Barracks. His work remains a defining feature of Australia’s architectural heritage, symbolizing how individuals can contribute to national identity and growth despite humble beginnings.
